Tasting
Eye: lemon yellow colour, straw-coloured reflections
Nose: lemon, lime, citrus, raspberry
Palate: this dry white wine is a burst of freshness, a discharge of lively acidity. The citrus fruit sparkles, carried by a biting mineral texture. The finish is clean, a crystalline wave that awakens the senses and leaves you salivating.
Terroir
Lowland vineyards with soils composed of schist and limestone alterations.
Winemaking process
Biodynamic viticulture. Hand-picked harvest, with grapes sorted on the vine. Spontaneous fermentation (indigenous yeasts), vinification without added sulphites, bottling without filtration, clarification nor addition of sulphites. The ingredients used are simple: healthy grapes.
Chenin Blanc: Varenne du Poirier plot, soils of grey-black schist from the Precambrian period (610 to 570 million years ago). East-west exposure on a high plain (Varenne also means plain). Vines planted in 2009. First matured for 6 months in 225-litre barrels, then racked and matured in fiberglass vats before blending.
Cabernet Franc: Champ du Moulin plot, soils of altered limestone and sandstone schists from the Tertiary period (23.5 to 5.3 million years ago). Vines planted in 2010. Direct pressing of deliberately under-ripe grapes. The slightly pink colour of the first juices disappears after settling. Aged in stainless steel vats.
Early blending of the two grape varieties after vinification. Bottled according to the lunar cycles.
Winemaker
This wine is a “four- hand”, created by Christophe Kaczmarek and Jean-François Vaillant, winegrower at Domaine Les Grandes Vignes in Black Anjou (called “black” due to the schist soils).
As always with Caaaaaaat, the wines are vinified, blended, bottled and packaged on the estate. From the vine to the cellar, everything is done with respect, with the aim of regenerating the soils, encouraging biodiversity and respecting the people who are part of it.
